This is the perfect cold side to eat in the summer with a veggie plate! My mama always made this when she cooked fresh green bean with potatoes, squash and onions, and creamed corn from her garden. It is such a yummy salad that it would be good with just about any meal!
Ingredients:
1/2 large onion, diced
1 large or 3 small cucumbers, diced
2 medium tomatoes, diced
1 bell pepper, diced
1/3 cup white wine vinegar
dash of salt/pepper
sweeten to taste (I use stevia.)
Instructions:
Add all diced vegetables to a bowl.
Add vinegar to bowl.
Add salt/pepper/stevia to taste.
Mix well.
