Mama's Summer Veggie Salad

This is the perfect cold side to eat in the summer with a veggie plate! My mama always made this when she cooked fresh green bean with potatoes, squash and onions, and creamed corn from her garden. It is such a yummy salad that it would be good with just about any meal!



Ingredients:

  • 1/2 large onion, diced

  • 1 large or 3 small cucumbers, diced

  • 2 medium tomatoes, diced

  • 1 bell pepper, diced

  • 1/3 cup white wine vinegar

  • dash of salt/pepper

  • sweeten to taste (I use stevia.)


Instructions:

  1. Add all diced vegetables to a bowl.

  2. Add vinegar to bowl.

  3. Add salt/pepper/stevia to taste.

  4. Mix well.

  5. Enjoy!
