Blueberry Slurry

  • 1 cup frozen blueberries

  • 1 1/2 T arrowroot powder

  • stevia or monk fruit to sweeten

Put blueberries in a pan and cover with water.

Bring this to a boil.

Add the arrowroot powder to 2 T cold water and blend.

Add arrowroot to the hot blueberry mixture.

Stir until thickened.

Add stevia or monk fruit to taste.

Serve over pancakes.
